Ingredients
- 8 Saba bananas
- 1 cup Jackfruit
- 3/4 cup Brown sugar
- 8 Lumpia wrappers
- 3 cups Cooking oil
Steps
- Halve the saba bananas lengthwise and roll each piece in brown sugar until well coated.
- Lay a banana half and a few jackfruit strips on each wrapper; roll tight, sealing with water.
- Fry in 350°F oil, 3 to 4 minutes per side, until deep golden.
- In the last minute, sprinkle a spoonful of sugar into the oil around each roll — it caramelizes on contact into a glassy shell.
- Drain on a rack. The best turon shatters, then gives way to molten banana and perfumed jackfruit. Eat warm, ideally from a street cart, but home works too.
