Ingredients
- 1.5 lb Salt cod
- 1.5 lb Potatoes
- 3/4 cup Olive oil
- 1 cup Whole milk
- 5 cloves Garlic
- 1 tbsp Lemon juice
- 1/4 tsp Nutmeg
Steps
- Soak the salt cod 24 hours, changing the water 3 to 4 times — under-soaked cod is inedibly salty and there is no fixing it later.
- Simmer the cod 10 minutes until it flakes; drain and pick out every bone and bit of skin.
- Boil the potatoes until tender and rice them while hot.
- Warm the milk with the garlic cloves until fragrant, then fish out the garlic.
- Beat the flaked cod with the potato, then drizzle in the olive oil and warm milk alternately, whipping hard — brandade should be fluffy and mousse-like, never gluey.
- Season with lemon, nutmeg, and white pepper; it should taste of the sea, rounded by olive oil.
- Pile into a gratin dish, brown under the broiler 5 minutes, and serve with grilled bread and a green salad.
