Ingredients
- 1 lb Blood sausage
- 2 lb Potatoes
- 3 Tart apples
- 4 tbsp Butter
- 0.5 cup Milk
- 1 Yellow onion
- 0.25 tsp Nutmeg
Steps
- Boil the potatoes in salted water until completely tender, then mash with butter, warm milk, salt, and nutmeg until fluffy. Heaven (apples) and earth (potatoes) get their names in this mash.
- Sauté the sliced apples in butter over medium-high heat until the edges caramelize and they’re just tender — 4 to 5 minutes. Set aside.
- Slice the blood sausage 1/2-inch thick and crisp it in a hot skillet 2 minutes per side. The slices should be browned at the edges and hot through.
- Soften the sliced onion in the sausage drippings until sweet and golden.
- Plate a swoosh of mash, arrange the sausage slices and apples over it, and crown with the onions. It sounds odd; it tastes like a Rhineland autumn.
