Ingredients
- 3.5 cups All-purpose flour
- 2.25 tsp Active dry yeast
- 2 tbsp Sugar
- 2 cups Warm water
- 1 tsp Salt
- 2 qt Neutral oil
- 1 cup Honey
- 2 tsp Ground cinnamon
- 1/2 cup Toasted walnuts
Steps
- Whisk the yeast and sugar into warm water and rest 5 minutes until foamy — no foam, no rise, start over. Stir in the flour and salt into a thick, stretchy batter and rise 1 hour until doubled and bubbly.
- Heat the oil to 350°F and keep a thermometer in it; the difference between golden puffs and greasy ones is exactly 25 degrees.
- Dip a tablespoon in oil, scoop batter, and push it off with your thumb into the oil in quick succession — the oiled spoon is the traditional trick for round puffs. Fry in batches, turning, until deep golden, about 3 minutes.
- Drain 30 seconds on a rack, then drizzle generously with honey while still hot so it soaks in. Shower with cinnamon and walnuts. Loukoumades wait for nothing.
- Keep finished puffs warm in a 200°F oven while you fry the rest — they hold crisp for 20 minutes and every serving goes out hot.
