Ingredients
- 3.5 cups Flour
- 1 cup Butter
- 1.5 cups Sugar
- 4 Eggs
- 1/2 cup Orange juice
- 2 tbsp Orange zest
- 1 tbsp Baking powder
- 1 Coin
- 1/2 cup Powdered sugar
Steps
- Cream the butter and sugar until pale and fluffy, about 5 minutes — the cake’s tenderness starts here.
- Beat in the eggs one at a time, then the orange juice and zest.
- Fold in the flour and baking powder gently; the batter should be thick and fragrant.
- Pour into a buttered round pan and press the wrapped coin into the batter — the finder gets luck for the year.
- Bake at 350°F for 45 minutes until deep golden and a tester comes out clean.
- Cool completely, then dust the top thickly with powdered sugar.
- Cut on New Year’s Day with ceremony: the first slice for Christ, the second for the house, then for each person oldest to youngest.
