Ingredients
- 2 lb Flank steak
- 1/2 cup Soy sauce
- 1/4 cup Brown sugar
- 3 cloves Garlic
- 1 tbsp Fresh ginger
Steps
- Slice the flank across the grain into thin strips and marinate in the shoyu mixture at least 4 hours.
- Arrange on a rack and dry in a 175°F oven 3–4 hours until jerky-chewy but still pliable.
- Flash-sear the strips in a screaming-hot pan 30 seconds per side for a caramelized crust.
- Serve as pupu with rice; pipikaula is Hawaiian beef jerky with a sear, and it disappears fast.
- Pipikaula keeps 2 weeks refrigerated — it is the original Hawaiian road-trip food.
