Ingredients
- 1.5 lb Ono fillets
- 3/4 cup Macadamia nuts
- 1/2 cup Panko
- 1 Egg
- 3 tbsp Butter
- 1 Lemon
- 2 tbsp Parsley
Steps
- Pulse the macadamias to coarse crumbs — not dust, texture is the point — and mix with panko.
- Brush the ono with beaten egg, press firmly into the nut crust, and chill 10 minutes so it adheres.
- Sear crust-side down in foaming butter 3 minutes, flip, and finish 2 minutes more.
- Serve with lemon and parsley; the nuts toast in the pan into something better than breading.
- Press the crust on firmly and chill before searing — the nuts stay put instead of sliding off.
