Ingredients
- 2 cups Coconut milk
- 3/4 cup Sugar
- 5 tbsp Cornstarch
- 1/2 cup Water
- 1/4 tsp Salt
Steps
- Whisk the cornstarch and water smooth — no lumps, or they haunt the final texture.
- Simmer the coconut milk and sugar, whisk in the slurry, and stir 5 minutes until thick enough to coat a spoon heavily.
- Pour into a pan and chill at least 3 hours until firmly set.
- Cut into clean squares with a hot knife; haupia should be cool, creamy, and coconutty through and through.
- Cut with a hot, wet knife for the cleanest squares — wipe between cuts.
