Ingredients

- Pressure-cook or simmer the rice and dal together in 5 cups water until both collapse into a soft, porridge-like mass, about 25 minutes — bisi bele bath should be spoonable, never grainy.
- Simmer the chopped vegetables separately until just tender; they join the pot later so they keep their shape.
- Whisk the tamarind into a cup of hot water and stir it into the rice-dal with the bisi bele bath powder, jaggery, and salt.
- Fold in the vegetables and simmer 10 minutes, stirring often, until the bath thickens to a slow, lava-like bubble.
- Heat the ghee, pop the mustard seeds and curry leaves, fry the cashews golden, and pour the whole sizzling tadka over the bath.
- Rest 5 minutes covered so the tempering perfumes the dish.
