Ingredients
- 1.5 lb Ground beef
- 6 slices Bacon
- 1 cup Cheddar
- 1/4 cup Almond flour
- 1 Egg
- 2 tsp Smoked paprika
- 1 tsp Onion powder
- 1/3 cup Sugar-free barbecue sauce
Steps
- Heat the oven to 400°F. Crisp the diced bacon in a skillet, 6 minutes; drain on paper towels and reserve 1 tablespoon of the fat.
- Mix the beef, bacon, cheddar, almond flour, egg, paprika, onion powder, and 2 teaspoons of salt gently with your hands.
- Roll into 18 meatballs and arrange on a foil-lined sheet pan.
- Brush each meatball with barbecue sauce.
- Bake 18 to 20 minutes, until browned and reading 160°F on a thermometer.
- Brush with more sauce and broil 2 minutes for sticky, caramelized edges — watch closely, since sugar-free sauce can catch fast.
- Rest 5 minutes; the cheddar inside will be molten.
