Ingredients
- 2 cups Fine bulgur
- 3 tbsp Tomato paste
- 2 tbsp Pepper paste
- 1/3 cup Olive oil
- 3 tbsp Pomegranate molasses
- 6 Scallions
- 1 cup Fresh parsley
- 1/2 cup Fresh mint
- 12 Lettuce leaves
Steps
- Pour 2 cups boiling water over the bulgur, cover, and rest 15 minutes until tender and fluffy; fluff with a fork.
- Work the tomato and pepper pastes into the warm bulgur with your hands — the heat blooms the pastes into the grains.
- Whisk the olive oil, pomegranate molasses, and lemon juice; toss through the bulgur.
- Fold in the scallions, parsley, and mint; season boldly with salt, cumin, and chili flakes.
- Chill 20 minutes so the grains drink up the dressing.
- Serve mounded on a platter with lettuce leaves for scooping; kısır is eaten by hand, wrapped in lettuce.
- Turkey’s beloved bulgur salad: tangy, herby, and endlessly scoopable.
