Ingredients
- 1 lb Mozzarella
- 1 cup Semolina
- 1 cup Sugar
- 2 tbsp Rose water
- 1 tbsp Orange blossom water
- 2 cups Clotted cream
- 1/2 cup Pistachios
Steps
- Simmer the sugar with water into a syrup; add the rose and orange blossom waters and cool.
- Melt the mozzarella with the semolina and a splash of syrup over low heat, stirring constantly, until it forms a smooth, stretchy dough, about 10 minutes.
- Turn onto a syrup-brushed surface and roll thin while hot — work fast, it stiffens as it cools.
- Cut into rectangles, pipe a line of clotted cream along each, and roll into tight cylinders.
- Chill 1 hour to set the rolls.
- Slice on the bias and arrange on a platter; spoon over the fragrant syrup.
- Shower with ground pistachios and serve cold; the stretchy cheese dough against cool cream is pure Levantine magic.
