Ingredients
- 1.5 lb Lamb
- 2 Onion
- 1.5 cups Raisins
- 0.75 cup Almonds
- 0.25 cup Honey
- 2 tsp Cinnamon
- 1 tsp Ginger
- 1 tsp Turmeric
- 1 tbsp Ras el hanout
- 0.25 cup Olive oil
- 1.5 tsp Salt
Steps
- Brown the lamb in the olive oil until well crusted, then add the sliced onions and cook 10 minutes until golden and sweet.
- Stir in the ginger, turmeric, cinnamon, and ras el hanout and cook 2 minutes until the spices bloom and smell incredible.
- Pour in 2 cups of hot water, cover, and simmer 60 minutes until the lamb is completely tender.
- Add the raisins and honey and simmer uncovered 25 minutes, until the sauce reduces to a dark, glossy glaze that coats the meat like lacquer.
- Toast the almonds until golden and scatter over the top just before serving — they must stay crunchy against the silky meat.
