Ingredients
- 1.5 lb Beef sirloin
- 1 Onion
- 2 Bell peppers
- 1 cup Cherry tomatoes
- 0.25 cup Olive oil
- 2 tsp Cumin
- 1 tsp Paprika
- 3 cloves Garlic
- 0.25 cup Parsley
- 2 tsp Salt
Steps
- Cut the beef into 1.5-inch cubes and toss with olive oil, cumin, paprika, minced garlic, and salt. Marinate 30 minutes at room temperature.
- Cut the peppers and onion into chunks the same size as the beef so everything cooks evenly on the skewer.
- Thread beef, pepper, onion, and tomato onto skewers in repeating patterns — the alternation looks beautiful and the vegetables baste the meat.
- Grill over medium-high heat 8 to 10 minutes, turning every 2 minutes, until the beef is charred outside and rosy inside.
- Rest 5 minutes so the juices settle back into the meat.
- Slide off the skewers onto warm flatbread and shower with parsley. Brochettes are Morocco’s weeknight grill — simple, smoky, and satisfying.
