Ingredients

Steps

  1. Cut the 3 thick brioche slices into 3/4-inch-wide sticks; whisk the eggs, milk, and cinnamon in a shallow dish until the cinnamon is evenly dispersed.
  2. Soak the sticks in the egg mixture for 20-30 seconds per side — brioche soaks up custard fast, so don't let them sit or they'll fall apart.
  3. Melt the butter in a large nonstick skillet over medium heat until it foams; add the soaked sticks without crowding and cook for 2-3 minutes per side, turning to brown all four sides, until deeply golden all over.
  4. Work in batches so the sticks have space to crisp instead of steaming.
  5. Warm the maple syrup in a small saucepan over low heat for 1-2 minutes, until just warm and loose.
  6. Tip: keep the finished sticks warm in a 200°F (95°C) oven while you cook the remaining batches so everything lands hot at once.
  7. Serve the sticks with the warm syrup for dipping.
