Ingredients
- 6 oz Sirloin strips
- 1 Bell peppers
- 1/2 Onion
- 3 slices Provolone
- 1 tbsp Olive oil
Steps
- Slice the sirloin as thin as you can against the grain, then season with salt and pepper. Thinly slice the bell peppers and onion.
- Heat a large cast-iron or nonstick skillet over high heat with the olive oil until it just starts to smoke.
- Sear the beef in a single layer for 60-90 seconds per side — it should brown fast and stay pink inside. Transfer to a plate; don't overcook it now or it turns chewy.
- Drop the heat to medium and add the peppers and onion to the same skillet. Cook 5-6 minutes, stirring, until softened with charred edges.
- Return the beef to the pan and toss everything together for 30 seconds. Lay the provolone slices over the top.
- Cover the skillet for 1-2 minutes until the cheese melts into a gooey blanket. Serve straight from the pan.
