Ingredients
- 14 oz Evaporated milk
- 14 oz Sweetened condensed milk
- 4 Egg yolks
- 1 tsp Vanilla
- 1/4 cup Port wine
- 1/2 cup Sugar
- 3 Egg whites
- 1 tsp Cinnamon
Steps
- Simmer both milks together 25 minutes, stirring constantly, until thick enough that the spoon leaves a trail. Do not let it catch.
- Off the heat, whisk in the yolks one at a time, then the vanilla and port. Pour into small glasses; chill 2 hours.
- Beat the egg whites with the sugar over simmering water to 160°F, then whip to glossy stiff peaks for a stable Italian meringue.
- Pipe or spoon the meringue over each glass in soft peaks. Dust with cinnamon.
- Serve chilled. The sigh — suspiro — is the meringue dissolving over the rich manjar below.
