Ingredients
- 2 lb Fresh sardines
- 1/4 cup Olive oil
- 4 cloves Garlic
- 2 Lemon
- 1/4 cup Parsley
- 2 tbsp Coarse salt
- 2 Bell peppers
Steps
- Rinse the sardines and pat dry; salt them generously inside and out 15 minutes before grilling.
- Brush the grill grates clean and oil them well — sardine skin sticks mercilessly.
- Grill over fierce heat 3 minutes per side; the skin should blister and char in spots.
- Meanwhile char the peppers whole until blackened; peel, slice, and dress with olive oil and garlic.
- Rest the sardines 2 minutes so the flesh firms.
- Serve on a platter with the peppers, lemon halves, and parsley; eat with your hands, the proper way.
