Ingredients
- 2 lb Mixed seafood
- 2 cups Arborio rice
- 1 Onion
- 3 Tomatoes
- 4 cloves Garlic
- 1/4 cup Olive oil
- 6 cups Fish stock
- 1/4 cup Cilantro
Steps
- Simmer the shrimp shells and fish trimmings 20 minutes into a quick stock; strain and keep hot.
- Soften the onion, garlic, and chopped tomatoes in olive oil until they melt into a sauce.
- Add the rice and toast 2 minutes until the grains turn translucent at the edges.
- Pour in the hot stock and simmer 12 minutes, stirring occasionally; the rice should be loose and brothy.
- Nestle in the seafood and cook 5 minutes more until just opaque — overcooked shellfish turns rubbery.
- Rest 5 minutes and shower with cilantro; serve in deep bowls with lemon.
