Steps
- Mix the flour, eggs, water, and a teaspoon of salt into a firm dough; knead 8 minutes until smooth, then rest covered 30 minutes.
- Pulse the beef, pork, grated onion, garlic, and a splash of ice water into a juicy filling; season boldly with salt and black pepper.
- Roll the dough thin and cut 3-inch rounds. Place a teaspoon of filling on each, fold into a half-moon, and pinch the corners together into the classic ear shape.
- Freeze the pelmeni on a floured tray 20 minutes — they hold their shape better and cook more evenly from frozen.
- Boil in well-salted water in batches; they are done 2 minutes after they float to the surface.
- Toss with melted butter and serve with sour cream, dill, and plenty of black pepper. Leftovers freeze perfectly for a month.
