- If the cantaloupe is not already cold, give it 15 minutes in the fridge first -- cold melon against salty prosciutto is the whole point of this bite.
- Cut 1 cup cantaloupe into bite-size wedges, removing the rind. Aim for pieces about 2 bites each.
- Tear each prosciutto slice (2 oz total) in half lengthwise. Prosciutto stretches and tears easily, so handle it gently.
- Wrap each melon wedge in a piece of prosciutto, tucking the seam underneath, and arrange seam-side down on a plate so the bites do not unroll.
- Top with 4 torn basil leaves and a pinch of cracked black pepper.
- Serve right away -- assembled bites do not hold well, so make them just before eating.
