Ingredients
- 4 Celery stalks
- 2 tbsp Tahini
- 1 tsp Lemon juice
- 1 tsp Sesame seeds
Steps
- Trim 4 celery stalks and cut each into 3-inch lengths so the boats fit comfortably in your hand.
- In a small bowl, whisk 2 tbsp tahini with 1 tsp lemon juice and 1 tbsp water. Keep adding water 1 tsp at a time until it pours off the spoon -- tahini seizes up and looks dry before it loosens, which is normal, so keep whisking through the thick stage.
- Taste the thinned tahini and add a pinch of salt. Tahini tastes flat without salt, so season until it tastes rich and bright.
- Line up the celery boats and spoon or drizzle the tahini into each groove, filling them generously.
- Sprinkle 1 tsp sesame seeds over the tops for crunch.
- Serve right away -- filled celery boats get watery if they sit, so fill them just before snacking.
