Ingredients
- 1.5 lb Herring fillets
- 1/2 cup Rye flour
- 4 tbsp Butter
- 1.5 lb Potatoes
- 1/2 cup Milk
- 1/2 cup Lingonberry jam
- 2 tbsp Chives
Steps
- Dredge the herring fillets in seasoned rye flour, shaking off the excess.
- Fry in foaming butter 2–3 minutes per side until the skin crisps and the flesh just flakes.
- Mash the potatoes with warm milk and butter until fluffy.
- Serve the herring over the mash with lingonberry jam and chives; crisp skin, sweet jam, perfect.
- Serve immediately — fried herring waits for no one and the skin loses its crisp within minutes.
