Sesame Noodle Cup

Weeknight-friendly Chinese cooking: Sesame Noodle Cup comes together in 15 minutes with wheat noodles, tahini, and not much else. It is weeknight cooking that still hits your targets — 8 grams of protein per serving. Simple enough for a Tuesday, good enough to serve to guests — that is the whole idea.

Ingredients

Steps

  1. Boil the wheat noodles in well-salted water until just tender. Before draining, reserve 1/2 cup of the starchy cooking water.
  2. Add the tahini, soy sauce, and chili oil to a large serving bowl.
  3. Beginner tip: whisk in 1/4 cup of the hot noodle water. The tahini will seize and look broken before it smooths out. Keep whisking, it always comes together.
  4. Toss the hot drained noodles in the sauce, loosening with more noodle water a splash at a time, until every strand glistens.
  5. Julienne the cucumber into matchsticks.
  6. Divide the noodles between bowls and top with the cucumber and an extra drizzle of chili oil.
  7. Serve immediately, tossing at the table. These are meant to be saucy, not dry, so when in doubt, add another splash of noodle water.
