Ingredients
- 1/2 cup Thai tea mix
- 4 cups Water
- 1/2 cup Sugar
- 1/4 cup Sweetened condensed milk
- 1/4 cup Evaporated milk
- 4 cups Ice
Steps
- Bring 4 cups of water to a rolling boil, then steep the Thai tea mix for 5 minutes. Thai tea mix already contains sugar and spices. The deep orange color and vanilla-like aroma are the tell that you have the right stuff.
- Strain through a fine-mesh sieve, pressing the leaves to extract every drop of color and flavor. Stir in the sugar while the tea is still hot so it dissolves completely.
- Stir in the sweetened condensed milk until smooth, then the evaporated milk. Taste. Cha yen should be sweet, creamy, and bold enough to stand up to a glass full of ice.
- Fill tall glasses to the brim with ice and pour the tea over. Watch it cascade. The color gradient as the tea hits the ice is half the pleasure.
- Serve with a straw and drink immediately. The ice dilutes as you sip, which is exactly how it is meant to be. The last sips are the mellowest.
