Ingredients
- 1 cup Dried djon djon mushrooms
- 2.5 cups dry Long-grain rice
- 1 Yellow onion
- 4 cloves Garlic
- 1 tsp Fresh thyme
- 1 cup Green peas
- 3 cups Vegetable broth
- 3 tbsp Olive oil
Steps
- Soak the djon djon in 3 cups hot water for 20 minutes, then strain through a fine sieve, pressing to extract every drop of the dark, earthy liquid. This mushroom water is liquid umami — and it dyes the rice a dramatic black.
- Sauté the onion, garlic, and thyme in olive oil until soft. Stir in the rice to coat.
