Copycat McChicken (McDonald’s style)

Chicken breast does the heavy lifting here, with low-fat buttermilk rounding it out. An American dinner that takes 25 minutes, start to finish. Each serving lands at 330 calories with 34g of protein, so it eats like a much heavier meal. Simple enough for a Tuesday, good enough to serve to guests — that is the whole idea.

Ingredients

Steps

  1. Pound the chicken to an even half inch and soak it in the buttermilk with salt 20 minutes — that’s where the tenderness comes from.
  2. Mix the light mayo with lemon juice and a pinch of pepper; this brightened copycat mayo needs 10 minutes in the fridge to bloom.
  3. Dredge the chicken in seasoned flour, back through the buttermilk, then press firmly into the panko so every crumb sticks.
  4. Air fry at 390°F for 11 minutes, flipping at 6, until the crust is mahogany and the center hits 165°F.
  5. Toast the buns cut-side down in a dry skillet while the chicken rests 2 minutes.
  6. Sauce both bun halves, pile on the shredded lettuce, and press the chicken in — the lettuce goes under the patty so the bun never sogs.
