Ingredients
- 8 oz Lean ground beef (93/7)
- 2 Sesame burger buns
- 2 slices Light American cheese
- 2 tbsp Ketchup
- 2 tsp Yellow mustard
- 8 Dill pickle chips
- 2 tbsp Minced onion
Steps
- Form two loose 4 oz patties, slightly wider than the bun — they shrink, and you want full edge-to-edge coverage.
- Season only with salt and pepper right before they hit the pan; seasoning early draws out juice.
- Sear in a hot skillet 3 minutes per side, then drop the cheese on in the last minute and tent with a lid so it drapes.
- Toast the buns cut-side down in the beef drippings until the edges brown.
- Dress the crown with ketchup and mustard, the heel with onion and pickles — condiments on the crown never waterlog the bottom bun.
- Rest the assembled burgers 2 minutes so the cheese sets instead of sliding off on the first bite.
