Ingredients
- 2 lb Chicken wings
- 1 tbsp Baking powder
- 1 tsp Kosher salt
- 1/2 tsp Black pepper
- 1 tbsp Butter
- 4 cloves Garlic
- 1/2 cup Parmesan
- 1 tsp Dried parsley
- 4 stalks Celery
Steps
- Pat the wings completely dry — this is the single most important step, because moisture is the enemy of crisp skin in the oven.
- Toss with baking powder, salt, and pepper and rest uncovered in the fridge for at least 30 minutes; the baking powder raises the skin’s pH and turns it shatteringly crisp.
- Bake on a wire rack at 425°F for 45 minutes, flipping once, until deeply golden and the skin crackles when you tap it.
- Sizzle the garlic in butter just until golden at the edges — 60 seconds, no more — then toss the hot wings in it with parmesan and parsley.
- Serve with celery and a light ranch or blue cheese on the side; the cool crunch is the wing joint’s oldest trick and it still works.
