Ingredients
- 2 lb Chicken wings
- 1 tbsp Baking powder
- 1 tsp Kosher salt
- 1/4 cup Low-sodium soy sauce
- 2 tbsp Rice vinegar
- 2 tbsp Honey
- 1 tbsp Sriracha
- 2 cloves Garlic
- 1 tbsp Fresh ginger
- 1 tsp Sesame seeds
Steps
- Dry the wings thoroughly and toss with baking powder and salt, then chill uncovered 30 minutes — the fridge time dries the skin so it crisps instead of steaming.
- Bake on a wire rack at 425°F for 45 minutes, flipping once; the rack lets hot air hit every side, which is how you fake the fryer.
- Simmer the soy sauce, vinegar, honey, sriracha, garlic, and ginger for 5 minutes until it coats a spoon — it should be glossy and sticky, not watery.
- Toss the hot wings in just enough sauce to glaze them; drowning them makes the crisp skin you worked for go soft.
- Finish with sesame seeds and serve immediately, because a sauced wing waits for no one.
