Ingredients
- 2.5 cups All-purpose flour
- 1 cup Butter
- 1.5 cups Granulated sugar
- 4 Eggs
- 0.75 cup Milk
- 0.33 cup Cocoa powder
- 2 tsp Baking powder
- 2 tsp Vanilla extract
Steps
- Cream the butter and sugar until pale and fluffy — 4 full minutes. This aeration is the difference between a tender crumb and a brick. Beat in the eggs one at a time, then alternate flour and milk.
- Divide the batter in thirds. Stir the cocoa and a splash of milk into one third for the chocolate batter; leave two thirds vanilla with the vanilla extract.
- In a buttered loaf or bundt pan, spoon alternating dollops of vanilla and chocolate batter. Drag a knife through once in an S-curve — once. Over-swirling muddies the marble into plain brown.
- Bake at 350°F for 50 to 60 minutes until a skewer comes out clean. Cool 15 minutes in the pan, then turn out.
- Dust with powdered sugar or glaze with chocolate. Every German grandmother has a marmorkuchen opinion; the only universal rule is that the swirl should be visible in every slice.
