Ingredients

- Whisk the eggs with a pinch of salt and a spoonful of water until no streaks remain; the water steams the roll from inside and keeps it tender.
- Stir in the carrot, scallions, and bell pepper — small dice only, so the roll stays smooth.
- Heat an oiled rectangular pan (or small skillet) over medium-low and pour in a thin layer of egg; when the edges set but the top is still wet, start rolling from one side.
- Push the roll to the far side, oil the pan again, pour another thin layer, and roll back over it — repeat until all the egg is used.
- Rest 1 minute, slice into 1-inch pinwheels, and serve warm; the spiral cross-section is the whole charm.
