Ingredients

Steps

  1. Cut the paneer into 1-inch cubes. Too small and the cubes fall apart on the skewer, too big and the centers stay cold.
  2. Whisk the yogurt with the tikka masala paste and 1/2 teaspoon of salt. Coat the paneer cubes and marinate 15 minutes at room temperature, or up to 4 hours refrigerated.
  3. If using wooden skewers, soak them in water for 20 minutes so they don{Q}t scorch under the broiler.
  4. Thread the paneer onto skewers, alternating with chunks of bell pepper and onion.
  5. Position an oven rack about 6 inches from the broiler element and heat the broiler on high.
  6. Broil 10 to 12 minutes, turning once halfway, until charred at the edges and the marinade is caramelized. Beginner tip: char is flavor here. Don’t pull them while still pale.
  7. Rest 3 minutes, squeeze fresh lemon over the skewers, and serve hot.
